It’s been a few weeks since we’ve sprung forward and moved to Daylight Savings time began, but I still haven’t been able to get in the groove. It’s so nice having more daylight in the evening, but having to get up at the break of dawn just isn’t my thing. My family doesn’t care for early mornings either. I nearly have to drag my son out of bed to get him to school on time, and my daughter insists on staying with Daddy so she can nap while I take big brother to school in the mornings.
To help our mornings along, I try to do everything at night. I make lunches, make sure my son’s backpack is together. I make sure to find those “always lost” shoes and lay his clothes out. I’ve also started making breakfasts ahead of time. Our favorite breakfast to enjoy as a family is overnight slow cooker oatmeal. It’s so comforting to wake up to simmering wholesome oatmeal. All we have to do is pour a glass of juice for the little ones and make ourselves our favorite coffee to go along with it.
You can make overnight oatmeal just about any way. My favorite go-to way is this cinnamon roll oatmeal. It tastes amazing and you can easily add raisins, currents, nuts or fresh berries to go along with it. To make just add oatmeal, water and cream to slow cooker. Then add brown sugar, cinnamon and salt. Then just set it to low and forget about it.
The next morning, I like to stir in a little vanilla extract right before serving. This makes it taste so wonderful! And let’s not forget the icing. You can’t get that true cinnamon roll taste without a little sweet and creamy icing. I make this simply by adding powdered sugar and a little milk to a bowl and string well. Then just drizzle the icing over the oatmeal and garnish with some freshly grated cinnamon before serving.
If you like, feel free to also garnish with nuts, raisins, or fresh berries. I’ve even topped oatmeal with trail mix that had lots of dried fruits in it. It’s so good!

Yield: serves 2
For the Cinnamon Roll Overnight Oatmeal:
1 cup steel cut oats
4 cups water
1/4 cup cream of half and half
3 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
For the frosting:
1/2 cup powdered sugar
1 - 2 teaspoons milk
1/2 teaspoon vanilla extract
For garnish:
freshly grated cinnamon
For the Cinnamon Cream Coffee:
Dunkin Donuts Cinnamon Coffee Roll Coffee
freshly whipped cream
freshly grated cinnamon
For the oatmeal:
Combine steel cut oats, water, cream, brown sugar, cinnamon and salt in slow cooker. Stir well and cover with lid. Turn slow cooker to low and cook overnight 8 - 10 hours.
to make frosting, combine sugar with milk in a small bowl and stir well.
Before serving, stir in vanilla extract. Spoon into bowls and garnish with icing and freshly grated cinnamon.
For the Coffee:
Brew coffee and top with fresh whipped cream and freshly grated cinnamon .
