Since it’s November, it’s time to start thinking about our Thanksgiving Day menus. And not just dinner, the menu for all day. We usually have guests in from out of town that stay with us, so I always think of a breakfast, appetizers and munchies for Thanksgiving day, as well as the big turkey dinner with all the trimmings. Today, I wanted to share with you the pancakes I’ll be making Thanksgiving morning. These are very simple, delicious and come out perfect every time.

Thanksgiving is a day that you want to avoid disasters by any means possible. That means making easy recipes that you’ve made before. My rule is to never try a new recipe out on Thanksgiving Day. I always go with the easy recipes that I’ve made for years or one’s that I have pre-tested. That’s where these pancakes come in. They are a little fancier than just plain pancakes because they’re cornmeal. However, they’re just as simple because you use self-rising cornmeal and pancake mix (I used Bisquick).

After pouring the pancake batter in the pan, just sprinkle in some dried cranberries. You could also use different types of dried fruits in these pancakes like blueberries, cherries or even add nuts like walnuts or pecans instead. Then top with more dried cranberries and pour on the warm Maple syrup. It’s a delicious fall breakfast the whole family will love. AND if someone in your family is gluten free, just omit the pancake mix altogether. The pancakes will just be a little bit thinner.

To prevent sticky pancakes, always use a non-stick skillet that has also been drizzled with oil or sprayed with non-stick cooking spray. I’ve always have a nonstick skillet that I only cook pancakes in. If you like those amazing crispy edges, add a little oil in between cooking each pancake. If you want to add a meat to your Thanksgiving breakfast, serve these pancakes with country ham or bacon.

Cranberry Cornmeal Pancakes

Ingredients:

2 cups self-rising yellow cornmeal
1/2 cup Bisquick
1 cup milk
1 large egg
1 tablespoon melted butter
1 cup dried cranberries

Directions:

Mix cornmeal, Bisquick, milk, egg and butter in a large bowl. Mix well.

Preheat a large skillet and drizzle with olive oil or vegetable oil. Pour pancakes into skillet and sprinkle with dried cranberries.

After pancakes are cooked, sprinkle with more dried cranberries and top with maple syrup.
