It seems like the older I get, the more I appreciate simplicity, especially in the kitchen, This new trend of exploding flavors isn’t quite my thing. Peanut Butter and Jelly Sriracha burgers? Yep, I’m definitely passing, but if you put a simple grilled burger in front of me, I’ll be all over it.
That’s why I love simple combinations like cucumber, cream cheese and mint on a Triscuit cracker. These are perfect for an afternoon snack in the warmer months. The cool cucumber and refreshing mint is a wonderful combination. Pair these little bites of goodness with a tall glass of iced tea and you’re good to go.
We eat lots of cucumber all summer because it’s one of the few things I’m good at growing in our garden. The addition of cream cheese adds a cool, creamy texture that’s irresistible. I top it off with fresh mint from my garden that I always have on hand. It’s the only thing that I can’t kill in the garden since it grows more like a weed than anything else.
