Easy Carne Asada Burritos

It’s been kind of a chaotic month for us. Hurricane Mathew gave us quite a scare here in Florida, but fortunately he didn’t do much damage in our area. I over-prepared and we thankfully didn’t even lose power this time. We just had lots of yard cleanup the following Saturday and 2 whole Hurricane days off of school. Those are our “snow days” here in Florida, except instead of playing outside in a winter wonderland, we’re hunkered down inside and hoping trees don’t come through the roof.

It’s been a pretty busy month already, but we’ve managed to get the Halloween decorations up at least. I have lots of cutesy decorations for the kids. It’s one of my favorite holidays because it’s just all about kids having fun and lots of candy. I can’t wait to go trick or treating this year with my daughter because she’s walking now.

Because everything’s been so busy, I’ve been gravitating to my quick and easy favorite recipes. Right now the fewer ingredients required for dinner, the better. These burritos are one of our favorites. Carne Asada burritos were our favorite in college at the little Mexican restaurant near our house. This recipe is based on that one. It’s just lots of tender beef, fresh salsa and guacamole. Except I take a shortcut to make these fake-out carne asada burritos that are full of flavor and super tender. You can add bell peppers and onions to the meat if you like, or just skip it to save time.

This quick and easy fake-out carne asada recipe has just a few ingredients!

Of course this isn’t real carne asada, but it’s a quick, easy and most important, delicious short-cut. For these burritos I used a package of Steak-EZE.

To make Steak-EZE, just remove from packaging, and place it in the skillet. Then I added a little chopped green peppers and onions and just quickly sautéed them until the meat was browned. While that was cooking, I heated my tortillas in the microwave.

To assemble, I just piled on some yummy Steak-EZE and then fresh salsa and fresh guacamole. It’s so simple and your family will absolutely love these.

Serve with a few tortilla chips or a simple salad and dinner is done! This would be a great meal for these crazy hectic fall weeknights, especially halloween night. You can have this dinner on the table in less than 15 minutes.

Easy Carne Asada Burritos

Ingredients:

  • 1 21oz package Steak-EZE
  • 1 teaspoon taco seasoning
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 container fresh refrigerated salsa
  • 1 container fresh refrigerated guacamole
  • 4 large flour tortillas

Directions:

Add Steak-EZE, taco seasoning, onion and green peppers to a large skillet. Saute until meat has browned.

Heat flour tortillas in microwave until warm. Assemble burritos by adding Steak-EZE, fresh salsa and fresh guacamole to tortilla. Roll the burrito up and enjoy!
