Easy Lunch Box Ideas for Busy Mornings

Weekday mornings can be hectic, especially when it comes to getting breakfast and l lunch together for the family. My son’s school day is a little longer, so I have to pack him lunch, plus 2 snacks. And trying to find foods and snacks that we both agree on can be a little difficult.

The best tool I’ve found to help pack lunches is this type of little lunch cube. I can put a sandwich or wrap on one side, and fruits or veggies on the other side. I make one of these for my son, and one for my husband so he can eat it in the car on the go. When I pack this cube along with an apple or energy bar, makes a great lunch.

My son is really good about eating leftovers, so I always make sure to have some on hand for lunch the next day. If I don’t, I’ll have sandwich meat on hand. Then I make either a simple sandwich or wrap with lots of fresh spinach. This morning I made a wrap with leftover roast beef, BBQ sauce and a handful of spinach. For a snack I gave him orange wedges, grapes and an apple.

I try not to stick to any one type of lunch for my family. Being able to make different lunches everyday is so much fun for them. I just use a little creativity by pulling random things fro the fridge to make something a little different everyday.
