It’s been just over a week since we welcomed our newest family member. We are so in love and sleepy, really sleepy. We always forget just how much a newborn wakes up in the middle of the night. He’s such a sweet little baby, and our son and daughter are head over heals in love with him too.
Because the baby is here, my husband and I get to go on a healthier eating journey that will include shedding a few pregnancy pounds. One of my favorite things that we did before I was pregnant was Meatless Mondays. Getting creative with vegetarian dinners is so much fun and a great way to include healthier eating habits in the kids too!
Meatless Mondays are easier than ever now with all the delicious meal options from MorningStar Farms. For this recipe I used MorningStar Farms® Falafel Burgers. They are vegan and 100% Plant Based Protein from Beans & Rice. My whole family loves these. They have an amazing taste and deliver 9g of plant based protein!

They are made with garbanzo beans and rice and include cilantro, parsley and onions and are perfectly seasoned for an incredible taste. These burgers are also great on the grill too!
For this recipe, I used MorningStar Farms® Falafel Burgers to make these yummy Falafel Burgers with homemade Tzatziki Sauce. These burgers are super simple to make. Just follow the package directions to prepare the Falafel Burgers and while they are cooking, make the homemade Tzatziki Sauce.
Tzatziki Sauce is super simple to make. It just consists of plain yogurt, cucumber, garlic and lemon juice. Then you just add some fresh dill and mint if you have it and salt and pepper. This cool refreshing sauce pairs perfectly with these burgers and really accentuates the flavor.
For toppings, I like to have cucumber slices, sliced tomatoes, red onions and lettuce. Fresh spinach is also really good on these too. And for a side, nothing beats some tasty homemade chips.
Sweet potato chips work perfectly with these burgers and are so easy to make. Just use a mandoline to slice sweet potatoes really thin and then just deep fry them until they are crispy and delicious. Then just sprinkle on a little salt and they are done! I like to use the leftover Tzatziki Sauce as a dipping sauce for them. They are so good!

For Tzatziki Sauce:

Combine all ingredients for tzatziki sauce. Whisk together well.
For sweet potato chips:
Heat vegetable oil to 350°for frying. Deep fry potato slices, frying until crispy. You will have to fry in batches. Be sure not to overcrowd fryer when cooking.When potatoes are done, drain on paper towels and season with salt.
For burgers:
Prepare MorningStar Farms® Falafel Burgers according to package directions, or grill for even more flavor. Toast burger buns and top with Falafel Burgers, sliced veggies and Tzatziki Sauce. Serve with sweet potato chips and enjoy!
