German Macaroni Salad

Do you like pasta? Or do you love it like we do in our house? We love pasta so much, we could eat it every single day for the rest of our lives. Pasta is just so versatile, and makes a perfect one dish dinner or side to any easy weeknight dinner. It’s great kid food and can be covered in something as simple as butter or as elaborate as my Sicilian Grandma’s lamb bolognese.

Since pasta is such a staple in our house, I love to buy Dreamfield’s Pasta. It’s a healthier lower carb pasta that works great for our lifestyle. I love the idea of serving my family a healthier pasta that also tastes wonderful.

We make all types of pasta dinners and side dishes. One of my favorite recipes recently though is this simple German macaroni salad. It’s full of ham, pickle relish and crunchy vegetables. Then it’s seasoned with German style deli mustard, sour cream and mayonnaise. It’s super simple, and so delicious.

This would make a great salad to take along to a family get-together this holiday season. It’s so easy because it can be served chilled, so you can make it ahead and it doesn’t have to be reheated. This recipe can also be easily doubled or tripled for a large crowd.

German Macaroni Salad

Ingredients:

2 cups uncooked elbow macaroni

½ cup diced bell peppers

½ cup diced onion

½ cup diced celery

1 cup diced dill pickles

1 cup diced ham

½ cup sour cream

½ cup mayonnaise

1 tablespoon pickle juice

1 teaspoon salt

2 teaspoons black pepper

1 teaspoon paprika

2 tablespoons Stone Ground or German Style mustard

Directions:

Cook macaroni according to package directions. Drain and rinse with cold water and add to a large mixing bowl.

Add bell pepper, onion, celery, dill pickles, ham, sour cream, mayonnaise, pickle juice, salt, black pepper, paprika and mustard. Mix well to combine.

Refrigerate until ready to serve. Serve chilled.

GERMAN MACARONI SALAD (Lower Sodium Recipe provided by Dreamfield’s nutritionist)

Preparation Time: 20 minutes
Cook Time: 8 minutes
Chill Time: 2 hours

Ingredients

2 cups Dreamfields Elbows
1/2 cup diced cooked low sodium ham
1/2 cup diced dill pickles
1/2 cup diced bell pepper
1/2 cup diced onion
1/2 cup diced celery
1/2 cup sour cream
1/2 cup mayonnaise
1 tablespoon pickle juice
2 teaspoons black pepper
1 teaspoon paprika
2 tablespoons Stone ground or German-style mustard

Instructions

Cook pasta according to package directions. Place pasta in large bowl.

Toss pasta with ham, pickles, bell pepper, onion, celery, sour cream, mayonnaise, pickle juice, salt, pepper, paprika and mustard.

Refrigerate until ready to serve. Serve chilled.
Makes 4 servings.
