I hope you and your family had a wonderful Christmas! We spent the week before Christmas in the mountains, in the snow! Since my husband and I both  grew up in Florida, we think snow i s the coolest thing ever! We have a tradition every winter of escaping the heat and humidity of Florida for a winter snow filled mountain getaway.

Our Christmas was quiet and relaxing filled with lots of toys and cookies. My kids are are spending the week playing with their new toys and making a huge glorious mess. I know moms hate mess, but I love it too, the alternative of a sparkly house with no kids isn’t something I ever want.

Now our focus is planning a New Year’s celebration. Our tradition in our family is to eat rich on New Year’s eve to celebrate our blessings of the previous year, and then eat frugally on New Year’s Day to respect our Southern heritage, to remember our poor share-cropping grandparents and to hopefully bring luck to the new year. This year is no different, I’ve ordered the best steaks from Snake River Farms to celebrate New Year’s eve.

I already ordered earlier in December from them and the steaks were absolutely perfect. We ordered filet mignons. Their filets are wet-aged 21+ days for improved flavor and texture and hand cut by a master butcher. These steaks are perfect on the grill with just a little salt and pepper. The best beef needs only simple seasoning.

To go along with these steaks I just served a simple Caesar salad and a loaded baked potato with a twist. The green garnish you see isn’t onion,  it’s fresh chopped jalapeño and it’s glorious! You have to try it if you like spicy foods, you won’t be disappointed!

A quick and easy recipe for Grilled Filet Mignon.

Ingredients:

  • 4 Snake River Farms Filet Mignon
  • salt and pepper

Directions:

Cook until desired temperature over hot grill set to high heat. I recommend the rare side of medium rare at 115°.

Rare Red center, very cool 110°F
Medium Rare Red, warm center 120°F
Medium Pink throughout 130°F
Medium Well Pink center 140°F
Well Done No pink Not recommended
