Grilled Greek Chicken Salad

I woke up a few mornings ago with the strongest craving for Greek food. We have a huge Greek church near our house, and at their last Greek festival I ate such a huge amount of the most wonderful Greek food, I really hadn’t craved it for a while. But since it’s a few months till their next festival, I just had to make something with all those wonderful Greek flavors I crave.

So yesterday I decided to make this wonderful Grilled Greek Salad. I started with fresh Tyson boneless skinless chicken breasts. Did you know that Tyson Fresh Chicken has been raised by family farmers for more than 75 years? It’s all natural* with no added hormones or steroids**.

I first brush my chicken with a little olive oil so it won’t stick to my grill. Then I just use the same all purpose Greek seasoning I’ve been using since my GBFF introduced it to me a few years ago (I won’t say exactly how many).  The brand is Konriko and is easy to find. It contains no M.S.G.

While my chicken is grilling, I make the dressing for my salad, which is essential a thinned tzatziki sauce. I start with some plain Greek yogurt, a half a cucumber, fresh dill, garlic and lemon juice. After a quick twirl in the food processor, the dressing is done.

For the salad, I start with some chopped romaine, cucumber and tomato. Then I addd sliced onion, black olives and banana pepper rings. And of course I crumble lots of fresh feta cheese down over the top and add the grilled chicken. After a little drizzle of the dressing, dinner was done!

Greek Chicken Salad

Ingredients:

For the chicken:
2 boneless skinless chicken breasts
1 teaspoon all purpose Greek seasoning
1 tablespoon olive oil

For the salad:
1 head of romaine lettuce, chopped
1/2 cucumber, chopped
1 large tomato, chopped
1/4 cup sliced onion
1/2 cup black olives
1/4 cup banana pepper rings
1/4 cup crumbled feta cheese

For the Dressing:
1/2 cup plain Greek yogurt
1/2 medium cucumber, chopped
1/4 cup fresh dill
1 clove garlic
the juice of 1/2 a lemon
1 tablespoon olive oil
salt and pepper

Directions:

For the chicken:
Heat grill to medium heat. Brush chicken breasts with olive oil and sprinkle with Greek seasonings. Grill chicken until done, about 15 minutes, depending on size and thickness of breasts. Internal temperature should be 165°.

For the dressing:
Combine all ingredients for dressing in a food processor or blender. Blend on high until all ingredients are incorporated and dressing is smooth. Set aside.

For the salad:
Layer lettuce, cucumber, tomato, onion, black olives. banana peppers and feta cheese. Chop grilled chicken and add to salad. Drizzle with salad dressing and serve.
