I’ve been wanting to try pizza on our new gas grill, so when Pillsbury asked me to come up with a new recipe for their new Artisan pizza dough, I knew it was going to be grilled pizza.
Since it’s still summer, I wanted to use as many fresh veggies as possible. So for this pizza, I used lots of zucchini and bell peppers, and finished it with feta. It’s full of fresh summer flavor.
This is the new pizza dough. It’s super easy, just unroll from the can. Did I mention it’s also whole wheat? No need to feel guilty anymore on pizza night.
I first spread the dough out on a cookie sheet, and then transferred it to the grill.
This part wasn’t the easiest, but I was able to fix the dough a little once it was on the grates. You can also just leave the dough on the cookie sheet and cook it on the grill.
This is the dough after cooking over the lowest heat setting for about 5 minutes.
You can see it’s got some nice color on the other side.
Now just flip it over.
Add some sauce.
Some cheese.
And a bunch of fresh veggies including spinach, zucchini, colorful bell peppers and red onions.
I finish this pizza off with feta. It has the most wonderful Greek flavors.

Yield: 4 servings
1 can (13.8 oz) Pillsbury® refrigerated artisan pizza crust with whole grain
1/4 cup Marinara Sauce
1 cup shredded mozzarella cheese
2 cups fresh spinach
1/4 cup chopped zucchini
1/4 cup chopped red onion
1/4 cup chopped red pepper
1/4 cup chopped yellow pepper
5 oz crumbled feta cheese
Heat grill to low heat. Spray grill grates with nonstick cooking spray. Unroll pizza dough on a cookie sheet and transfer directly to grill grates. Close grill lid and cook pizza dough for 4 – 5 minutes, or until lightly browned in bottom.
When pizza dough is lightly browned, flip dough and add marinara sauce, mozzarella cheese, spinach leaves, chopped zucchini red onion, red pepper and yellow pepper. Add crumbled feta cheese.
Close grill lid and cook pizza until crust is deep golden brown and spinach has wilted. Remove pizza from grill. Slice and serve.
