Jalapeño Potato Latkes with Chipotle Cream and Fried Eggs
My family is so excited that it’s the week of Thanksgiving. We’re putting together our menu today and tommorow, cleaning the house and shopping for our groceries. We went to Target this morning so I could use one of my grocery coupons but they were already out of Butterballs! They said they’d have more tomorrow morning but told me to come by early because it’s the fresh Butterballs that they have on sale.
Tomorrow we’ll shop for all the rest of our fresh ingredients too. I like to make lots of fresh veggie sides and appetizers. Then we’ll prep on Wednesday and do as much as we can so we’re not in the kitchen all day on Thursday. I love Thanksgiving, but I don’t love slaving away in the kitchen all day while the family has fun without me.
Since we’ll have some family in from out of town I wanted to make something fun for Thanksgiving breakfast too, so I’m going to be making these fun potato latkes. These are so easy and delicious. I just start with a bag of Simply potatoes shredded hash browns and mix in an egg, some flour and onions. To make these extra spicy, I added chopped fresh jalapeño for the adults.
Then I just fry them in a little vegetable oil until they’re crispy. For garnish, I mixed a little chipotle peppers in adobo with sour cream and drizzled it on top. Then I chopped a little fresh cilantro and sprinkled it on top and served it with an over easy egg.

Ingredients:
For the latkes:
- 1 (20 oz) package shredded hash browns
- 1/4 cup diced green onion
- 1 tablespoon finely chopped fresh jalapeño
- 2 Davidson's Safest Choice® pasteurized egg(s)
- 2 tablespoons flour
- 1 teaspoon baking powder
- salt and pepper to taste
For the chipotle cream:
- 1/4 cup sour cream
- 2 - 3 teaspoons chopped chipotle peppers in adobo sauce
Additional Ingredients:
- Vegetable oil for frying
- 4 Davidson's Safest Choice® pasteurized eggs, fried to desired doneness
- fresh cilantro to garnish
