Key Lime Margaritas

It’s been a little over a year since we moved in our new home, and we’re still working on things here and there. These last few weeks, we’ve re-finished all the wood floors. There was water damage, lots of gaps and I wasn’t too crazy about how light in color they were, a pale golden oak. It took forever, but we finally hit the bare wood. I learned that pre-finished wood floor is not a good thing, that is if you ever need to repair it or want to change the color. It’s a bit of a nightmare. Apparently the pre-finish is so incredibly hard, it’s almost sandpaper resistant. It took at least 4 times longer to sand than a traditional floor. But the floors are fixed now and a new darker stain has been added. Just a few more days for the polyurethane to cure, and we can put everything back the way it was before. I can’t wait!

With all this home improvement drama and polyurethane fumes, I’ve needed a cocktail a few times this past week along with a quick fix meal. One of the best cocktails I’ve made this week was this Key Lime Margarita.

Key limes are in season now through December. They have a distinctive tart taste and make a perfect compliment to a basic margarita. For this cocktail, I used the best agave tequila we have in the house, some good quality triple sec and regular sweet lime juice paired with the tart key lime juice. The resulting margarita is perfection. It’s sweet, tart, strong and smooth. Just remember, using the best tequila in this simple recipe is what makes it so incredible. Cheaper tequilas are best suited to serve at parties, paired with a big bottle of margarita mix 🙂

These Key Lime Margaritas are a perfect pairing for Old El Paso Chicken Enchiladas. You can find Old El Paso Chicken Enchiladas in your grocer’s freezer. They make enchiladas at home even easier. For a complete Mexican meal, add Old El Paso rice and re-fried beans as sides too.
