Lemon Curd and Cream Topped English Muffins with Fresh Berries

Summer is such a fun time in our home. We love to spend time enjoying our backyard pool when the kids are out of school. We spend all day playing in the water and in the backyard this time of year. That means some super hungry kids!

I’m always trying to think of fun and easy snacks for them that incorporate fresh ingredients. That’s how I thought of this quick and easy lemon curd topped English muffin with fresh cream and berries. It sounds kind of complicated but trust me it’s so easy!

This snack is so simple to make and tastes absolutely amazing. I start by toasting my favorite Thomas’ English Muffins.

Then I spread some lemon curd over a toasted the English muffin.

Next, I take some sliced strawberries and arrange them over the muffin.

Then I top that with some fresh whipped cream. I like to whip fresh cream in my food processor, but you can also use the canned stuff, it’s super easy!

After that just top with some fresh berries and you have quite an impressive little treat!

This is so fun for kids but would be a great afternoon treat to serve for girlfriends with tea or coffee.

It would also look so pretty on a Sunday brunch table too!

A quick and easy snack recipe for Lemon Curd and Cream Topped English Muffins with Fresh Berries

Ingredients:

  • 4 Thomas’ English Muffins Original Nooks and Crannies, split with a fork
  • 4 teaspoons lemon curd (from homemade or pre-made store-bought)
  • 1 cup whipped cream (from homemade or pre-made store-bought)
  • 1/3 cup fresh blueberries
  • 1/3 cup fresh raspberries
  • 1/3 cup fresh blackberries
  • 1/2 cup sliced strawberries

Directions:

Split Thomas’ English Muffins with a fork. Lightly toast muffins in toaster oven. Top with lemon curd and then fresh sliced strawberries.

Add a spoonful of freshly whipped cream and then top with fresh blueberries, blackberries and raspberries.
