Lemon Zucchini Bread

It’s almost Mother’s Day! Mother’s Day is such an important holiday for me where I can honor not only the mothers in my family but also my husband’s family and all the other mothers in our lives that contribute so much to the success of our family. I’ve been beyond lucky in my life to have had the most influential, strong, independent mothers that helped guide me through different life stages.

That’s why I’m so excited that we’ll be having a little Mother’s Day Brunch at our house for the Moms this year. This is the lemon zucchini bread that I’ll be serving this Sunday along with mimosas, a veggie filled quiche and other goodies. I make my zucchini bread packed full of zucchini goodness, but not sugar. (Our Moms don’t like things too sweet!) This recipe doesn’t call for that much sugar, so if your mom has more of a sweet tooth than mine, you can bump up the sugar to 3/4 or 1 full cup.

Lemon Zucchini Bread

Ingredients:

1 medium zucchini, grated (about 1 cup)

the zest of 1 medium lemon

1 egg

2/3 cup sugar

1/2 cup oil

1 1/2 cups all purpose flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/4 teaspoon baking powder

Directions:

Heat oven to 350°. Combine grated zucchini, lemon zest, egg, sugar and oil in a large bowl. Mix well to combine.

Sift together flour, baking soda, baking powder and salt. Add to wet mixture and mix to combine. Do not over mix.

Pour batter into baking baking dish and bake at 350° for 55 - 60 minutes or until bread is golden brown and has pulled away from the edges of the pan.
