I got the idea for these little slider sized melts at one of the nice restaurants when we were on vacation in West Virginia. I’m also starting to do videos, just one a week until I figure out how to do them more quickly.
Yield: Serves 4
4 lobster tails
salt and pepper
8 teaspoons melted butter
1 clove grated garlic
3 tablespoons roasted red pepper, chopped
1/2 cup cucumber, diced
3 tablespoons mayonnaise
sliced tomato
sliced avocado
lettuce
crisp bacon
thinly sliced provolone cheese
slider size rolls
1. Preheat oven to 350 degrees. Cut lobster tails in half. Place on a baking sheet. Melt butter and add grated garlic. Salt and pepper tails, and spoon 1 teaspoon butter and garlic mixture on each tail halve. Bake tails for 12 – 15 minutes, until they change in color.
2. When tails are done, remove meat from shells and flake or chop meat. Preheat broiler to high. Add lobster meat to a large bowl with chopped roasted red pepper, cucumber and mayonnaise. Combine well. Place slider rolls on baking sheet. Top with lobster salad, sliced tomato, avocado, crisp bacon and provolone cheese. Melt cheese under the broiler. This will only take a minute or two.
3. Add lettuce and serve.
