To try and jump start that diet I started and failed so miserably at, I’ve decided to start doing alot more smoothies. This recipe can be made almost as a weight gain, which is how I made it for my son with all coconut milk. Or you can use a low-fat soy or almond milk to make the calories less. This morning I made another one and used about 2 tablespoons coconut milk and the rest of the liquid was water.
Yield: Serves 2
1 over ripe banana
1 cup mango chunks (I used frozen, pre-packaged)
1 cup coconut milk, light or regular
a few ice cubes
Add all ingredients to the blender and mix on high until smooth.
