Margarita Marinated Grilled Steak

This past week was so busy for us, and full of new adventures. My husband started his first week of his 2nd of 3 internships. That means tight grocery budgets, and no more dining, movies or shopping until September. I’m a little nervous about getting through the summer on shoestring student funds, yet so glad this whole school thing is coming to an end. He’ll be done in December. One or both of us has been in this school work routine since um, ’94. That was when my husband then boyfriend, was busting his hump working as a stagehand at a nightclub at just 14. It’s been a long road, full of bumps and expenses, to get that Doctor title in front of his name, but I can say it was worth it, to get a little sliver of “the dream.” We were talking with friends last night, and someone said, “We have to remember to call you doctor now come December.”

My husband Josh then said, “No, no one calls me doctor but her,” pointing at me. Then he says jokingly “She’s the only one, and she has to do it 24/7.” (He kids because he’ll be a doctor of physical therapy)

In keeping with our new tight budget, we celebrated Cinco de Mayo at home with these margarita marinated grilled steaks. I’ve made margarita chicken many times, and I thought it was time to put that margarita marinade on a steak. I went to the supermarket on the hunt for skirt steak, but because they were out or didn’t carry it, I instead ended up with this thinly sliced sirloin. It turned out just as well. I cut this up in strips and we had it in a tortilla with the pico de gallo, some guacamole and some of that amazing green rice in the background. Don’t worry, I’ll post the recipe for the rice tomorrow.

Margarita Marinated Grilled Steak

Ingredients:

2 lbs skirt steak, or sirloin
the juice of 2 limes
the juice of 1 orange
1/2 cup tequila
1 teaspoon freshly cracked black pepper
1/2 teaspoon or more to taste chipotle chile powder
2 cloves garlic, grated
1/2 teaspoon ground coriander

Directions:

1. Add all ingredients, except steak to a shallow baking dish or zip-lock bag for marinating. Mix well, then add steaks. Let marinate for 2 - 3 hours.

3. Preheat grill to high. Brush with oil. Sear steak, cooking medium rare for skirt steak, and medium rare or medium for sirloin.

3. Slice against the grain and serve with rice or salad.
