This is my favorite summer salad. It’s quick, easy, and uses fresh summer produce. It’s perfect for any barbecue or summer get-together, is healthy, and won’t spoil easily like many mayonnaise based salads.

Yield:
Serves 4 2 large cucumbers, sliced thin 1. Thinly slice all vegetables and add all other ingredients except cheese in a large bowl. Cover and refrigerate over night 2. Serve garnished with feta cheese.Marinated Cucumber Salad
Ingredients:
1 large tomato, sliced thin
1 red onion, sliced thin
3 cups white vinegar ( or for a less acidic salad – 1 1/2 cups white vinegar and 1 1/2 cups water)
3 tablespoons sugar
2 teaspoons salt
lots of fresh cracked pepper
