For my daughter’s 6th birthday, we did these cute little mermaid tail cupcakes! They were fun to make and the girls at the party loved them. They were the perfect treat after an afternoon of swimming in the pool.
For these cupcakes, I started with a simp,e white cake recipe and tinted the batter a soft pink before baking them. After they were cooled, I frosted with a simple buttercream tinted with a pretty teal color.
For the candies on top, I used a mold from the craft store and candy melts with food coloring. Then I added some matching peal candies for decoration. They were fun to make for me and my daughter loved to help decorate them!
You can do these in any colors you like. We picked out specific food colors that matched the pearl candy sprinkles we found. We found the molds, food coloring and sprinkles at Hobby Lobby. They have a huge assortment of lots of molds to do many different projects there.

For the Cupcakes:
Preheat oven to 350°. Line a muffin pan with paper liners. In a medium bowl, cream sugar and butter together. Beat in the eggs and then vanilla. Sift together flour, baking powder and salt. Add 1/3 of flour mixture and a third of milk, alternating to creamed butter and sugar mixing on low speed until well combined. Scoop batter into cupcake liners. Bake 20 to 25 minutes, or until toothpick comes out clean. Cool completely.
For the Buttercream Frosting:
Add butter and sugar to stand mixer. Mix until well blended. Add vanilla and milk and mix on high until light and fluffy. Add food coloring to get desired color. Mix well. Frost completely cooled cupcakes.
For the Candy Mermaid Tails and Shells:
Melt candy according to package directions and add food coloring to get desired color. Pour melted candy in mold and refrigerate until set. Unmold and refrigerate until ready to use. Decorate cupcakes with candy mermaid tails and shells.
