One of my favorite food finds when we moved to central Florida was savory empanadas. It seems all the islands have their own variation, and they’re all amazing. My favorite version that I’ve tried is from Jamaica. They use lots of curry powder and beef to make their empanadas (also known as a Jamaican beef patties) that you just can’t resist.
I wanted to take all those amazing flavors of Jamaican beef patties, and put them into an easy to make party appetizer. So I made the flavorful filling and put them in these cute little mini Athen’s phyllo shells.
These little bite-sized appetizers are great for parties and get-togethers. And with Memorial Day weekend coming up, these would make perfect little treats for your guests. My family loves them. And if you have leftover filling, you can serve it over white rice. It’s amazing!

Yield: Makes 45 bites
1 lb ground beef
1/2 cup chopped onion
1/2 cup diced potato
1/3 cup diced carrot
1 clove garlic, finely diced
1 teaspoon salt
1/2 cup frozen and defrosted peas
1 tablespoon curry powder
1/2 cup beef stock
1/3 cup chopped green onions
1/4 cup chopped fresh Italian parsley
3 packages Athens mini phyllo shells
Heat skillet over medium heat. Add beef, onion, potato, carrot, garlic and salt. Cook until meat is browned and vegetables are tender. After meat is done, add peas, curry powder and beef stock. Mix well and cook until stock is almost evaporated.
Heat phyllo shells in oven according to package directions. Add a spoonful of filling to each cup. Garnish with fresh parsley and green onions.
