Orange Blossom Honey Cake

When my family and I travel, one of my favorite souvenirs to go home with is local honey. Every part of the country has its own local honey with its own unique flavor. And while I appreciate all the wonderful honey that I’ve sampled from different areas, my all-time favorite honey will always be our local Orange Blossom Honey. It’s light, sweet flavor is so perfect and so different from anything else I’ve ever tasted. The citrus flavor balances out the sweetness so well, and it works so well in all kinds different recipes.

We love honey so much we go through half gallon jugs of it at a time. We buy from a local bee keeper. I use it to sweeten tea, spread on biscuits, dip chicken,  top pancakes and waffles and in sweet treats like this simple honey cake.

This cake is super simple and really showcases our local orange blossom honey as well as our famous Florida orange juice. To help balance out the sweet honey, I added some delicious Florida orange juice. Here I use Florida’s Natural Orange Juice. We always have a container of it in the fridge.

This is a pretty simple cake that makes a perfect afternoon snack with a tea. It also pairs perfectly with coffee as a morning sweet treat or an after dinner snack. It’s pretty sweet, and I find it pairs really well with a bowl full of freshly cut fruits, like melon, apples, pears or peaches.

Orange Blossom Honey Cake

Ingredients:

  • 1 cup Orange Blossom Honey
  • 1/4 cup Florida's Natural Orange Juice
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 1/2 cups cake flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 2 tablespoons melted butter
  • powdered sugar for garnish

Directions:

Heat oven to 350°. Grease an 8 inch round cake pan. Line with parchment paper. Sift together flour, baking powder and baking soda in a large bowl. In a separate bowl, beat together the honey, eggs, butter and orange juice until well incorporated.

Add the dry ingredients to the wet and mix together until just incorporated, being careful not to overmix.

Pour batter into a greased 8 inch round cake pan and place in preheated oven. Bake at 350° for approximately 30 minutes, or until cake is set.

Let cake cool completely before removing from pan. Garnish with powdered sugar before serving.
