Orange Cheesecake with Candied Kumquats and a KitchenAid Giveaway
I hope you all had a wonderful holiday season and a beautiful new year! We just got back from vacationing in North Carolina where we had a blast playing in the snow, tubing, skiing and making snowmen. The first night we were there it snowed, so we had a great skiing conditions for the next couple of days. My son, after two lessons, has far exceeded his Mommy in skills. I had a very difficult time trying to keep up with him.
We were also fortunate enough to have my sister in law and here better half with us on vacation. My sister-in-law just lost a close friend a few weeks ago far too young. It was nice to leave our stress and troubles behind and just have a good time. I love how these family getaways really give a new fresh perspective, making us appreciate the beauty of outdoors and family more. My husband and I both find that the little things that drive us nuts just seem to disappear after vacation.
I’m not one to really make resolutions for the new year. I had a good friend that always said anyday is a perfect day to make positive changes in your life, don’t wait for the new year. But, because we were on vacation and it was so nice, our resolution for this year was to take more vacations.
When I got back, after binging on huge amounts of NC pork, I needed something sweet and decadent, so I made this orange cheesecake. And since it’s kumquat season (YAY!) I topped this cheesecake with candied kumquats. It was amazing!
Yield: Serves 8
Orange Cheesecake with Candied Kumquats
Ingredients:
For the crust:
2 packages graham crackers, from a box that has 3 packs
1 stick melted butter
For the cheesecake:
4 (8 oz) blocks cream cheese, at room temperature
1 cup sugar
1 cup sour cream
the zest and juice from 1 orange
4 eggs
For the candied kumquats:
2 cups sugar
2 cups water
1 pint kumquats, sliced
2 teaspoons vanilla
Directions:
Heat oven to 350°. Add graham crackers for crust in food processor. Pulse until the crackers are crumbs. Slowly add melted butter and pulse until crust comes together. Press crust into 9 inch springform pan.
Add cream cheese, sugar to stand mixer. Mix well. Add sour cream. Add eggs one at a time until combines. Add orange juice and orange zest.
Turn oven to 250° and bake cheesecake for about 2 hours, or until set. Cheesecake will very lightly brown.
For candied kumquats, combine all ingredients in a medium saucepan. Bring to a boil and cook over medium heat for about 30 minutes, or until kumquats are translucent. Remove kumquats with a slotted spoon and continue to reduce syrup.
Serve candied kumquats over cheesecake. Drizzle with syrup.
Notes: Cooking at a lower temperature like I have here at 250° prevents cracking (and I think makes it have a better consistency), but does take longer. If you are in a hurry, just bake at 350°.
