Here is a recipe I’ve been wanting to try for weeks. I first found it on one of the cooking forums in thriftyfun.org. Then, after a little more researching I found this was a really popular recipe, but one our family had never heard of. It’s so easy, you just take cream cheese and Oreos, process them in the food processor, and coat in almond bark. It’s so simple. My husband took most of these to his work for their Christmas party. I made all these recipes below, but made the dough first, divided it 4 ways, and then added the extracts (their measurements quartered) so we had a few truffles in each flavor.
If you haven’t used almond bark yet, it’s located in the baking isle near the other chocolate. You can use the leftovers to coat just about anything, I usually do pretzels and peanuts, but this year my neighbor brought by the best thing ever dipped in chocolate almond bark: a peanut butter Ritz sandwich. They were to die for! So simple, but so irresistible.
You can also make these with other extracts, like peppermint, raspberry or rum.
Yield: Serves 4
For vanilla truffles:
1 package Oreo cookies (you can use vanilla Oreos instead of chocolate, that's Megan's awesome idea)
1 - 8 oz package cream cheese, at room temperature
1 teaspoon vanilla extract
melted vanilla almond bark to coat
candy sprinkles
For orange truffles:
1 package Oreo cookies
1 - 8 oz package cream cheese, at room temperature
1 teaspoon orange extract
melted chocolate almond bark to coat
candy sprinkles
For coconut truffles:
1 package Oreo cookies
1 - 8 oz package cream cheese, at room temperature
1 teaspoon coconut extract
melted vanilla almond bark to coat
sweetened coconut flakes
For almond truffles:
1 package Oreo cookies
1 - 8 oz package cream cheese, at room temperature
1/2 teaspoon almond extract
melted chocolate almond bark to coat
crushed almonds
Place Oreo cookies in the food processor. Pulse until cookies are a fine crumb. Add room temperature cream cheese in pats to the food processor. Add extracts. Pulse until the mixture comes together in a ball.
Melt almond bark in the microwave according to package directions. Take Oreo and cream cheese mixture by the tablespoon and roll into a ball in your hand. Dip Oreo truffles in almond bark to coat and place on parchment paper to harden. Sprinkle with candy, nuts or coconut sprinkles right after placing on parchment paper before the candy has a chance to harden.
