My husband’s favorite side dish is crunchy roast potatoes, so I’m always trying to find new ways to serve them. I love to add different spices, and sometimes even ranch seasoning to them, but I’ve found with these wonderful little potatoes less is more.
So for these potatoes. I simply roasted them with salt and pepper and served them with lots of freshly grated Parmasan and fresh Italian parser. These make a wonderful side dish to any weeknight meal, and are even elegant enough to serve on holidays and when entertaining dinner guests.
To start this dish, I used Simply Potatoes Red Potato Wedges. They are so simple because they’re already washed, cut and ready to roast. All you have to do is place the potatoes in a single layer on a cookie sheet and bake them until crispy.

My family also loves when I make “trash plate”, it’s hash browns with a mix of whatever meats and veggies I can find in the fridge. Breakfast for dinner, or brinner is so much fun!
Making Simply Potatoes is also something I love to make for overnight guests. I can can make homestyle potatoes with bacon and eggs just like the dinner, and we never have to leave the house.
