Parmesan Potatoes

My husband’s favorite side dish is crunchy roast potatoes, so I’m always trying to find new ways to serve them. I love to add different spices, and sometimes even ranch seasoning to them, but I’ve found with these wonderful little potatoes less is more.

So for these potatoes. I simply roasted them with salt and pepper and served them with lots of freshly grated Parmasan and fresh Italian parser. These make a wonderful side dish to any weeknight meal, and are even elegant enough to serve on holidays and when entertaining dinner guests.

To start this dish, I used Simply Potatoes Red Potato Wedges. They are so simple because they’re already washed, cut and ready to roast. All you have to do is place the potatoes in a single layer on a cookie sheet and bake them until crispy.

Simply Potatoes are fresh, never frozen, and made with real potatoes. I love how convenient they are. There’s no prep, so that means more time I can spend with my family. And of course they’re a healthy kid-friendly option I can feel good about feeding my family.

There are many varieties of dimply potatoes to try from wedge potatoes like these to sliced potatoes, mashed potatoes and of course hash browns. You can find Simply Potatoes in the refrigerated dairy section of your local grocery store.

My family also loves when I make “trash plate”, it’s hash browns with a mix of whatever meats and veggies I can find in the fridge. Breakfast for dinner, or brinner is so much fun!

Making Simply Potatoes is also something I love to make for overnight guests. I can can make homestyle potatoes with bacon and eggs just like the dinner, and we never have to leave the house.

Roast potatoes according to package directions.

Top with freshly grated Parmesan cheese and fresh Italian parsley. Enjoy!
