I’ve got another Christmas cookie for you today! It may be a little early, but I just can’t help myself. I’m already so in the holiday spirit. It’s taking all I can do to hold off on all the Christmas decorations. I can’t wait to put up my tree and house lights.
This cookie is so simple. It’s just Betty Crocker chocolate chip peanut butter cookie mix made into large cookies. Then you mix Betty Crocker chocolate frosting with some peanut butter and make a cookie sandwich.
Then to make them festive, I just rolled them in some red and green sprinkles.
Yield: Serves 4
Betty Crocker Reese's Peanut Butter and Chocolate cookie mix
Butter and water as called for on cookie mix box
1 cup chunky peanut butter
1 cup Betty Crocker chocolate frosting
Assorted Christmas sprinkles
Mix and bake cookies as directed on package. Let cool completely.
Combine peanut butter and chocolate frosting in a large bowl. Mix well to combine. Spread peanut butter and frosting mixture between two cookies to make a sandwich.
Roll cookie in Christmas sprinkles to decorate. Add more sprinkles on top of cookie before serving.
