Peppermint Chocolate Truffle Frappé

I hope you had a wonderful Thanksgiving holiday. It was pretty quiet around our house. I was able to convince my family to help out a little more in the kitchen this year, so I didn’t have to spend so much time slaving away over the stove. I also transferred all the food into storage containers, instead of serving bowls, so I had less dishes to do.

For dessert, I attempted my first black bottom pie with was a huge success. It was chocolaty, filled with rum and exactly what I was craving. Although the day after Thanksgiving, all I could think about was a big apple and a pumpkin pie. I didn’t make them over the weekend, but I sure was tempted. New desserts are nice, but I always miss the old traditional dishes if we don’t make them.

For Thanksgiving dinner we made a rosemary lemon turkey, roasted red bell peppers and green beans, mashed sweet potatoes with Kerrygold butter, rosemary parmesan roasted new potatoes, collards greens and spicy smoked sausage and white acre peas. I made some easy Jiffy corn muffins and we skipped the dressing and even the gravy.

The day after Thanksgiving, we try to switch gears and immediately get into the Christmas spirit. But this year, things didn’t go exactly as planned. My son came down with a terrible stomach bug Friday night, so the rest of the weekend was devoted to taking care of him. He didn’t feel like eating, much less putting up Christmas decorations and making holiday cookies.

So most of the weekend we went lounging around on the sofa, and watching movies. And since we’re still enjoying our new iCoffee, we started experimenting with some new coffee drinks. I used International Delight® Peppermint Chocolate Truffle to create this fun layered frappé. It’s cool, refreshing and decadent too.

Ingredients:

2 cups ice cubes
3/4 cup coffee, cooled
1/4 cup International Delight® Peppermint Chocolate Truffle
Any flavor whipped cream or Delightful Whip

Directions:

Combine ice, coffee and International Delight in a blender and process until well blended and slushy. Top with whipped cream or Delightful Whip and serve immediately.
