Pizza Nachos

My favorite time of day is the afternoon. After my son gets home, and we’re all together in the kitchen making an afterschool snack, and he’s telling me all about his day— it is just the best. It’s an extra special day when my husband gets home early from work and can join in on the fun too. That way, we can all share an afterschool treat together as we talk about our day.

Of all the things I’ve made, my son’s absolute favorite afterschool treats are Totino’s pizza rolls. You know those frozen snacks that have all the wonderful flavors of pizza in a perfect, little roll? They’ve also become my daughter’s favorite treat as well. Their little size is perfect for her to hold in her tiny hands.

And I have to admit, pizza rolls are one of my guilty pleasures too. But to make them even more special for my husband and me, I’ve come up with this fun way to serve them as pizza nachos. These not only make a quick and easy afterschool snack, but they also make a delicious treat to munch on while watching the game on the weekends.

To make these pizza nachos, I simply bake the pizza rolls according to package directions – couldn’t be easier – and pile them high on a serving plate. Make sure to use an oven-safe plate because you’ll be putting these back in the oven to finish melting the cheese.

Next, you sprinkle on lots of shredded mozzarella and layer on some pepperoni.

Then you place in the oven until the cheese is nice and melty.

For garnish, sprinkle on diced tomatoes.

This is great on its own, but what really makes these pizza nachos just amazing is how versatile and customizable they are – I love to add a spicy and tangy, pickled garnish called Giardiniera Relish. I’ve also seen it labeled as Hot and Spicy Pizza Topping. It’s an amazing, spicy relish that works perfectly with pizza flavors. It usually contains pearl onions, cauliflower, hot peppers, carrots, and celery.

And lastly, add some fresh basil.

If you would rather make a mild version of this recipe, they also make a mild Giardiniera Relish that would work perfectly with this recipe. Or, just use mild banana peppers, pickled onions, green olives and black olives.

Ingredients:

  • 24 Pepperoni Totino’s Pizza Rolls
  • 12 Pepperoni slices
  • ¼ cup shredded mozzarella cheese
  • 2 tablespoons fresh basil
  • 1/3 cup fresh diced tomato
  • 3 tablespoons Hot or Mild Giardiniera Relish, or Hot and Spicy pizza topping, (optional)

Directions:

1. Bake pizza rolls according to package directions. Place pizza rolls on an oven safe plate. Top with shredded cheese and peperoni. Place plate back in oven for 3 – 5 minutes, or until cheese has melted.
2. After removing plate from oven, garnish with fresh tomato, fresh basil and Giardiniera Relish. Serve and enjoy!
