January has been off to a great start for our family. We started with a ski vacation to North Carolina. It’s usually pretty cool this time of year up there. But when we went, there was a heat wave! We slid down the slushy melting mountain in 60 plus degree temperatures. It was fun but I really hope we can actually see some real, or at least fake snow next year. It was a slippery slushy mess!
And since we’ve gotten back home, we’ve been trying to keep our activity up every day. We all got activity tracking watches for Christmas, so at the end of every day we’re all comparing steps, calories burned and active minutes. We’re getting pretty competitive and over the weeks are slowly improving. It’s exciting to get my son into running. Maybe he’ll be able to keep up with me soon!
We’re trying to eat healthy, new things too. One of the things I’ve been wanting to try is salad topped pizza. It’s a fun way to combine two things you would usually eat together anyway. My family has been eating the classic taco salad topped pizza for years, so I knew this would be something that we all loved.
To start, I used an American Flatbread Pulled Pork, Pineapple & Jalapeño Flatbread Pizza. American Flatbread is my new favorite frozen pizza. It’s a handmade, thin and crispy pizza baked in a wood fire oven. The sweet pineapple and fiery jalapeño paired with the smoky pulled pork is so delicious. But to make it even better, I paired it with this simple watercress salad and BBQ vinaigrette.
While the pizza is baking, I combine fresh watercress with chopped cucumber and fresh pineapple. It’s a super simple salad with a mix of flavorful watercress, cool cucumber and sweet pineapple that compliment this pizza so well.
For the dressing, I combine BBQ sauce, soy sauce, pineapple juice and red wine vinegar with olive oil. This is a simple dressing that works perfectly with this salad and with many other salads too. I always make a full recipe of this dressing and keep the remainder in the fridge for other salads because it’s so good!
After the pizza has baked, just top it with the fresh watercress salad. This makes a wonderfully easy dinner for a busy weeknight that your family is sure to love.

Prepare Flatbread pizza according to package directions.
Combine watercress, cucumber and pineapple in a large bowl. In a salad dressing shaker or mason jar combine all the ingredients for the salad dressing. Shake to combine and drizzle 3 tablespoons of the dressing over salad.
After pizza comes out of the oven, top with salad and enjoy!
