Pumpkin Spice Cookies with Cream Cheese Frosting
It’s that time of year again to buy cans of pumpkin and make some sweet treats for friends and family. I saw these little cake mix cookies a while back, and new I had to try them. They’re just 3 ingredients! I added a simple 3 ingredient cream cheese frosting to make them really special.
Just 5 ingredients and you have these tasty little treats. Canned pumpkin puree and spice cake mix for the cookies; cream cheese sugar and pumpkin pie spice for the frosting. The cookies are super soft and so flavorful. They are a perfect treat to take to friends and family.
The cream cheese frosting is the perfect blend of sweetness and spice. Just mix it together, and frost your cookies. Or leave off the frosting all together. These cookies are just as good without.
Note: These cookies bake up more of a ball shape than a flat cookie, and are super soft and cake-like.
Yield: Serves 6
Pumpkin Spice Cookies with Cream Cheese Frosting
Ingredients:
1 box Spice Cake Mix
1 (14 oz) can pumpkin puree
1 (8 oz) cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon pumpkin pie spice
Directions:
Heat oven to 350°. Combine Spice cake mix and pumpkin puree in a large bowl. Mix well with a whisk to combine. Drop cookie dough by the tablespoon onto a parchment lined cookie sheet.
Bake for 10 - 12 minutes, or until set. Let cool 3 minutes on cookie sheet before transferring to cooling rack.
After cookies are completely cooled, combine softened cream cheese, sugar and pumpkin pie spice. Whisk well to combine. Ice cookies.
