Ricotta Pancakes with Nutella

My son’s favorite breakfast is pancakes or waffles, so I try to make them for him as often as I can because I love them too. I usually make them during the week because my husband prefers some type of egg dish on the weekend. There’s nothing like a warm pancake first thing in the morning to get your day started off right.

For these pancakes I wanted to use ricotta. I’ve seen so many highly rated pancake recipes that have ricotta in them, so I couldn’t wait to try it. I started off with just using pancake mix and then adding ricotta, milk and eggs. The results were amazing. These were the fluffiest most wonderful pancakes I’ve ever had. They were super light and full of air, to dense or doughy at all.

I topped them with a dollop of Nutella and lots of fresh berries. These made the perfect summer breakfast for my son and I.

Yield: 6 small pancakes

Ricotta Pancakes with Nutella

1 cup pancake and waffle mix
3/4 cup milk
1/4 cup ricotta
1 egg
olive oil
Nutella for garnish
Fresh fruit for garnish


Combine pancake mix, milk, ricotta and egg in a large bowl. Mix well to combine.

Drizzle a preheated skillet over medium heat with olive oil. Cook pancakes until browned on each side.

Serve pancakes topped with Nutella and fresh berries.
