Here’s another way to roast a chicken, by stuffing it with grapes and herbs. It turns out really moist, and so good.

Yield:
Serves 4 1 whole chicken, giblets removed 1. Preheat oven to 350 degrees. Salt and pepper chicken. Put the chicken on a roasting rack in a roasting pan. 2. Add some grapes, lemon and fresh herbs to the cavity of the chicken. Add the onion slices on top of the bird and around in the roasting pan. Add the rest of the grapes to the roasting pan 3. Drizzle the chicken with olive oil. Bake at 350 degrees until the internal temperature reaches 165 degrees.Roast Grape Chicken

about 3 cups seedless grapes
1 lemon, cut in wedges
1 onion, sliced
a small handful of fresh herbs like thyme, rosemary or oregano
olive oil
