Blackened Chicken and Black Bean Nachos

Saints were our favorite team long before they had their Super Bowl victory. I thought it was the coolest thing ever when Kim Kardashian started dating Reggie Bush. Two of my favorite things, one of the Saint’s and one of the Kardashian’s became an item, it was pretty cool, even though their relationship was short lived. We can’t wait for their upcoming game against Seattle Seahawks on November 21. Our family loves pro-football. My husband, his brother and his Dad all like to see the pros in action over college teams. I am not quite as into football as the guys are in my family, so I take it upon myself to get everything ready for game day.

Even though the house is going too get trashed with company , I always make an effort to get everything very clean and tidy. Then I make my way to the grocery store for food and most importantly, beer for the guys, and red wine for the girls. We always love to get salty, spicy, and crunchy finger foods for game day. A must for every game day we have ever had is wings. Sometimes my brother-in-law or husband will pick them up from a local bar and grill. They love grilled hot wings. I prefer to save money and fry some Buffalo Wings up myself. I simply toss the wings in hot sauce, there are so many options of different brands and flavors in the grocery store.

Just a few days after their game with the Seattle Seahawks, they play my father-in-law’s favorite, the Dallas Cowboys on November 25, which of course is also Turkey Day. Thanksgiving is going to be real interesting in our house. There will be lots of “smack talk” and smart aleck comments going on, but it’s all in good fun.

Not only will I be preparing Thanksgiving dinner on the 25, but I also always prepare lots of football friendly appetizers. I always get a large variety of meats, cheeses and vegetables for everyone. I get pretzels, chips, and different crackers to munch on, and several dips for everything. By the time I’m ready to serve Turkey, everyone is just about stuffed. This is great because I have tons of leftovers to send everyone home with. No one that leaves my house on Thanksgiving day usually has to cook until the following Monday.

But back to next weekend, to go along with our traditional game day Buffalo Wings, I’ll also be making these delicious blackened chicken and black bean nachos. By the time everyone indulges in my wings and these tasty nachos, they will all be stuffed!

Yield: Serves 4

Blackened Chicken and Black Bean Nachos Recipe

1 pound boneless skinless chicken breasts, cut in bite-sized pieces
2 teaspoons blackened seasoning
olive oil
1 can black beans, rinsed and drained
2 tomatoes, diced
1 avocado, diced
1/2 medium onion, diced
2 tablespoons freshly chopped cilantro
a pinch of kosher salt
the juice from 1/2 a lime
1 small can sliced olives, drained
sour cream
canned salsa
tortilla chips
shredded lettuce
shredded cheese


Add blackened seasoning to chicken and toss to coat. Preheat a large skillet. Drizzle with olive oil. Cook chicken pieces over medium heat until done. Add rinsed and drained beans. Heat through. Remove from heat.

Add tomatoes, avocados, onion, cilantro, a pinch of salt and lime juice to a large bowl. Mix well.

Assemble nachos by placing tortillas on a plate, then chicken and bean mixture and lots of shredded cheese. Microwave for about 30 seconds, or place under broiler until cheese is melted. Then add shredded lettuce, the fresh tomato avocado salsa, sliced olives and sour cream. Serve with canned salsa on the side.
