Salted Caramel Fudge

Since I was about 10 or 11, I’ve been making fudge every year around the holidays. I remember one of my mom’s friend telling me how easy it was and I would never have to keep track of or memorize a recipe, because its always on the side of the marshmallow fluff jar.

Over the years I have taken that recipe and turned it into many different variations like almond fudge, peanut butter fudge, nutella fudge, pecan bourbon fudge, and so many more. This year, I decided to make a salted caramel fudge using my favorite brand of coffee creamer, International Delight.

I followed the same basic recipe as I always use, substituting the evaporated milk for one of my favorite ID coffee creamers instead, Salted Caramel Mocha. You could use any of the flavors to customize your fudge however you like. You can find all of the ID Seasonal Flavors here. I just cooked my butter, creamer and sugar until it reached 248°, and then added the chocolate chips and marshmallow fluff.

Then to finish, a little vanilla and some salt to bring out the flavor in the chocolate. After pouring it in a baking dish, I poured over some caramel sauce and sprinkled with a little sea salt.

Salted Caramel Fudge

Ingredients:

1/4 cup butter
2 1/2 cups sugar
2/3 cup International Delight Salted Caramel Coffee Creamer
1 (12oz) bag of semi-sweet chocolate chips
1 (7.5oz) jar marshmallow fluff
1/2 teaspoon salt
1 teaspoon vanilla
1/4 cup caramel sauce
sea salt for garnish

Directions:

Combine butter, sugar and coffee creamer in a medium size saucepan. Cook over medium heat, stirring occasionally until candy thermometer reads 248°.

Remove from heat and stir in chocolate chips, marshmallow fluff, salt and vanilla. Mix well and pour into a greased 8 x 8 casserole dish. Let cool completely. Pour over caramel sauce and sprinkle with sea salt.
