Simple Caesar Salad
We are still slowly unpacking and reorganizing our new home. After moving everything in our house, we still had a storage unit that had to be moved packed full of books, pictures, family mementos and lots of other little things. Since I’ve been spending so much time working around the house, our dinners have been really simple. I’ve been making some of our favorite foods like this simple Caesar salad.
I love making big salads in the summer, especially when I’m too lazy to even heat up the grill. To go along with this, I just sliced up a baguette and heated up a few chicken nuggets for my son.
And our outdoor grilling area is almost complete. I can’t wait to share the photos with you later this week.
Yield: Serves 4
Simple Caesar Salad
Ingredients:
For the Salad:
1 head Romaine lettuce, chopped
2 cups cherry tomatoes, sliced in half
1 can anchovies, drained (optional)
1 cup croutons
For the Dressing:
1 teaspoon Anchovy paste
The juice of 1 lemon
1 teaspoon Worcestershire Sauce
1/4 cup olive oil Mayonnaise, (instead of an egg)
1 garlic clove, grated
1/4 cup Olive oil
Directions:
Wash and chop lettuce. Prepare dressing by grating garlic in a medium bowl, adding the lemon juice, worcestershire sauce and the mayo. Whisk to combine.
Drizzle in the olive oil while continually whisking.
Toss lettuce, tomatoes, croutons and dressing in a large bowl. Serve salad topped with anchovy slices.
