Skinny Coffee Cooler
This first week back to school has gotten off to a crazy start. Waking up so early doesn’t seem to agree with any of us. Despite my best efforts, and best coffee, my son has still been late to school twice, and it’s only day 2! Hopefully I’ll be able to get us going a little earlier the rest of the week.
Waking up so early also has another affect I just realized – the overwhelming sleepiness that comes about 4pm. So for an afternoon pick-me-up today I decided to make this skinny coffee cooler. It has all the great taste of a coffee house iced coffee but is fat free, sugar free, and low in calories. It’s the perfect treat I can add to my day and still stay on track with my diet. By the way – I am currently down over 25lbs! My goal is another 5lbs, and I’m almost there!
This coffee cooler was so quick to make too. I just used some leftover coffee from this morning, added some International Delight Coffee Creamer, a little bit of ice and then gave it a whirl in the blender. After it was done, I just topped it with some fat free whipped topping, a little sugar free caramel and of course a toasted marshmallow!

In addition to adding International Delight coffee creamer to my coffee, it also makes one amazing popsicle. There’s four flavors to choose from, Toasted Hazelnut, Chocolate Almond Biscotti, Caramel Marshmallow and Caramel Creme. They’re all amazing, but for these popsicles, I used the Chocolate Almond Biscotti.

Skinny Coffee Cooler
Ingredients:
1 cup brewed coffee
1/4 cup
1/4 cup International Delight® Fat-Free and Sugar-Free Caramel Marshmallow (or any other flavor)
Ice cubes
Fat-free whipped topping
Directions:
Combine coffee and International Delight Fat-Free and Sugar-Free Caramel Marshmallow and pour over ice. Top with a dollop of fat-free whipped topping. Enjoy.
