Sliders with Avocado and Chipotle Mayonnaise

We love to eat homemade burgers, especially off the grill in our home. I have been seeing lots of different sliders on cooking shows and blogs lately, and thought I’d give them a try. They are just so cute and looked like alot of fun, especially for little kids. I found some water rolls, which looked like the perfect size for sliders at our local grocery store. I remembered a chipotle mayonnaise that I had seen on an episode of Bobby Flay, and thought it would be a perfect condiment for our burgers. I added some sliced avocados too to balance the heat, and add even more flavor. I just used salt and pepper to season my ground chuck. I really like, as Bobby Flay says, to just enjoy the beef. I also prefer an “au naturel” burger, just salt and pepper, I can always add other flavors with different toppings.  The size of the burgers were great fun for our son. He loved having a burger that was just his size.

Ingredients:

For Burgers
ground chuck 80/20
salt
pepper
sliced tomato
sliced hass avocado
lettuce
water rolls, or other slider sized roll
any sliced cheese, your choice, if desired

For Chipotle Mayonnaise
2-3 chipotle peppers, finely chopped
1/2 teaspoon adobo sauce
1/2 cup mayonnaise

Directions:

Form ground chuck into patties that are slightly larger in diameter than buns. Form patties into desired thickness. Salt and pepper one side. Preheat large skillet. Drizzle with oil. Place patties, seasoned side down in frying pan. Season other side. Flip only once during cooking time. Cooking times will vary depending on how thick you formed your burgers.

Prepare sliced vegetables.

Add ingredients for chipotle mayonnaise to a bowl and mix well. Slather chipotle mayonnaise on buns before topping with burger, lettuce, tomato and avocado. (This amount of mayo is enough for 6 - 8 burgers)

Use a toothpick to hold them together for serving if desired.
