Since school has started back, I really feel like things have slowed down a bit. We’re back in a routine, have a set bedtime and aren’t doing weekend getaways every week. My husband had time to mark off plenty of things on his honey-do list, but the list is still pretty long. I’ve been trying to get to things I’ve been putting off like printing and putting photos in those pretty frames I bought 6 months ago.
It’s a little more boring, but somehow comforting too. We’ll probably get in 2 or 3 more little getaways before our bigger vacation after Christmas. I still want to go camping, something we keep putting off, plus go back to Silver Springs and Pennekamp State Park to snorkel.
Since the key for us this time of year is relaxation, I want to make dinner as easy as possible, so I turn to my slow cooker at least once a week. This week I made these easy slow cooker chicken tacos with corn salsa.
For these tacos, I just start by adding some chicken breasts and taco seasoning to my slow cooker, turn it on and left it slow cook until the chicken is tender and falling apart. Then after it cooks all day, I take some send of summer corn and make this easy corn salsa.
It’s a simple dinner the whole family is sure to love. Enjoy!
Yield: 4 servings
For the chicken tacos:
3 boneless skinless chicken breasts
1 packet taco seasoning
½ cup water
12 flour or corn tortillas, warmed according to package directions
For the corn salsa:
1 (12 oz) bag Green Giant Honey Roasted Corn
½ cup diced red onion
1/3 cup diced green bell pepper
1 large diced tomato
1 cup fresh cilantro, torn or roughly chopped
the juice of 2 limes
Combine chicken, taco seasoning and water in slow cooker. Turn to low and cook for 6 – 8 hours, or until chicken is falling apart.
Combine all ingredients for corn salsa and mix well.
Warm tortillas according to package directions. Place chicken on tortillas and top with corn salsa.
