Slow Cooker Chicken Teriyaki Tacos

The holidays are almost here and my family is so excited. We’ve got all of our shopping done, the decorations are up and I’ve sent out the holiday cards. My son’s last day of school was yesterday and they spent the day eating cookies, drinking hot cocoa and watching classic holiday movies.
We’re currently on our way to the mountains for our winter vacation. I’m thrilled to be escaping the heat and humidity of Florida for a few days to get to see some beautiful white snow. Vacationing around the holidays with family is a tradition we started when we first got married and something our family cherishes every year.
This past week was so much fun, but busy too. I tried to save as much time in the kitchen as possible by taking shortcuts when I could. My favorite recipes I made this past week were these Slow Cooker Chicken Teriyaki tacos. Having them cook in the slow cooker all day and then just quickly assemble them after a long, busy day was so easy!
To start this recipe, you just add chicken, teriyaki sauce, onion and garlic to your slow cooker and turn it to low to cook all day. That’s it!
When your ready for dinner, just mix the ingredients for the sriracha mayonnaise together in a little bowl. Then chop some fresh veggies for the tacos.
You can heat the tortillas in the microwave or on grill pan. I also like to lightly fry them with a touch of olive oil.
As an appetizer for these tasty tacos, I like to serve Pagoda Crab Rangoons. These come with a sweet chili sauce for dipping too and pair perfectly with these tacos. These can be quickly baked in the poster oven or fridge in the deep fryer.
And for liquid refreshment, we absolutely love ice tea in our house. Gold Peak® Tea is our favorite brand and this tea pairs so well with the Chicken Teriyaki tacos.

Slow Cooker Chicken Teriyaki Tacos
For the Slow Cooker Teriyaki Chicken:
- 2 lbs boneless skinless chicken breasts
- 1 cup teriyaki sauce
- 1/2 cup chicken stock
- 3 tablespoons finely chopped onion
- 2 cloves garlic, finely grated
For the tacos:
- corn tortillas
- 1/2 cup cucumber
- 1/3 cup green onion
- 1/3 cup red bell pepper
- 1/4 cup freshly chopped cilantro
For the Sriracha Mayonnaise:
1 garlic clove, finely grated
1 cup mayonnaise
3 tablespoons Sriracha
2 tablespoons fresh lime juice
Add all ingredients for the Slow Cooker Teriyaki Chicken to slow cooker. Set to low and cook for 6 - 8 hours. When chicken is done, shred with fork.
For the Sriracha Mayonnaise, mix all ingredients in a medium bowl and set aside.
For the tacos, heat tortillas according to package directions, or lightly brown with a little olive oil in fry pan as shown in photos.
Assemble tacos placing chicken in tortillas and topping with cucumber. green onion, red bell pepper and fresh cilantro. Top with Sriracha Mayonnaise.
