I have procrastinated about sharing my favorite breakfast recipe, because it is just so easy, and I assumed everyone knows how to make it already. But I recently remembered I didn’t learn how to make it until I was 27. My mother never made this when I was growing up because she had a strong aversion to almost anything dairy because of her lactose intolerance. When my Dad and I got a craving for biscuits and gravy, we always went to a diner or the local Hardee’s.
I learned this easy recipe from my older sister, who I rarely see, but was visiting shortly after my mother’s death. I watched her quickly throw together three ingredients to make both of our favorite breakfasts in a jiff. She, like most Southern women, has given up on making homemade biscuits except for special occasions. So for this simple breakfast, she and I both bake frozen biscuits. Our favorite brand: Mary B’s in the frozen food isle.
Yield: Serves 4
1 lb ground breakfast sausage (I like Odom's Tennessee Pride)
4 tablespoons flour
2 cups milk
salt and pepper to taste
Brown sausage in skillet. After sausage is done, add flour and cook for 2 - 3 minutes. Add milk and turn heat to medium. Bring to a boil while stirring constantly. Reduce to a simmer and simmer about 15 minutes. Season with salt and pepper to taste.
Serve over hot biscuits.
