Southern Fried Pork Chops

This is a delicious southern comfort food. Fried pork chops were a staple in my family when I was growing up, and continue to be a part of our regular family meals now. I like to use bone in chops for more flavor, but you can use boneless pork chops also. I use my southern spice blend for this recipe, you could also use another Cajun seasoning. I like to make my own seasoning salt recipe, so that I can control the amount and type of salt that goes into it.  Serve this along side mashed potatoes and gravy with steamed or roasted potatoes.

2 tablespoons southern spice blend or cajun seasoning
2 eggs, beaten
2 cups all-purpose flour
Vegetable oil for frying

Directions:

Preheat oil for frying. Prepare the pork chops. Beat the eggs in a bowl and add a tablespoon of the seasoning to the eggs and mix thoroughly. Pour the eggs over the pork in a bowl, and let this set, covered on the kitchen counter for about 15 minutes.

Mix the flour and the other tablespoon of seasoning together. Dread the pork in the flour and fry at 350 degrees over medium heat until the pork chops are golden brown.

Drain the pork chops on paper towels or a clean kitchen towel.
