Spinach Avocado Dip
Since the new year, I’ve been trying to keep up with my resolution to eat healthier, especially since there’s a groeing baby in my belly. That means instead of low fat healthy foods, I’m costantly on the hunt for higher fat super foods that will satisfy my crazy pregnancy hunger.
One of my favorite, healthy foods that won’t leave me hungry is avocados. I’ve been eating them on just about everything and as snacks whenever possible. They’re just so good! But one of my new favorite creations is this spinach avocado dip. It’s a simple recipe that’s loaded with not only flavor, but also nutrition too.
Instead of traditional tortilla chips, I like to pair this dip with Old London Melba Toast. It’s not just for party appetizers, it also makes the perfect little snack. Melba Toasts come in Classic, Wheat, and New Ancient Grains; Melba Snacks – Roasted Garlic and Sea Salt. They all taste amazing and can be used for lots of different recipes.

Yield: 4 servings
Spinach Avocado Dip
A creamy, healthy snack dip that's loaded with 3 incredibly healthy super foods.
Ingredients:
2 Avocados, seeded and peeled
8 oz Spinach
1 clove Garlic, minced fine
2 tablespoons Lemon Juice
1 teaspoon cumin
1 cup chopped tomatoes
Salt and Pepper to taste
1 (5oz) box Old London Melba Wheat Toasts
Directions:
Add avocados, spinach, garlic, lemon juice and cumin to a blender or food processor. Pulse on high until all ingredients are incorporated. Season with salt and pepper.
Mix in chopped tomatoes and serve with Old London Melba Wheat Toasts.
