Last week was a great week. It was my son’s spring break and there was a lot of playing in the pool, watching movies and playing video games. We stayed up late, slept in and slacked on the chores. The house was a mess, but we had a great time.
At the end of the week we got have a little getaway. We took the little glamper to one of our great local state parks near the beach and had a blast. We were able to ride our bikes all over, go canoeing and hiking too. We made campfire s’mores, grilled every night and binged on a half bushel of oysters on the last day. We also all got in some good reading. It was such a blast.
Now that we’re back in the swing of things, it’s time to start cooking again. We have a few get-together’s coming up next month, so I thought I would try out some new appetizer bites. I love coming up with new recipes to share with friends and family. This time I wanted to come up with a recipe with International flair, that would please everyone.
One of my favorite International cuisines is Thai food. It’s amazing and you can make it as simple or complex as you like. Myself, I like to usually make the more simple dishes, and enjoy those complex Thai dishes at my favorite Thai restaurants.
Here I’ve just taken Sweet Thai Chili Sauce, one of my favorite condiments, and paired it with shredded chicken. Now with this you could make this into a multitude of things – tacos, sandwiches or salads. But to keep it party friendly, I’ve spooned it into Athens Fillo cups.
Athens Fillo cups are my favorite go-to ingredient when it comes to appetizers for a crowd. They make everything neat, portable and of so stinking cute. After I’ve spooned the chicken filling into the baked shells, I just top it with a garnish of sweet red pepper. These are those little snacking peppers. Then I add some cool cucumber, cilantro and some matchstick carrots for crunch and color.
And there you have it a super simple Thai chicken bite that is sure to please a crowd.

Yield: 30 bites
Follow package directions to heat Athens Fillo shells, cooking them until golden brown and crisp.
Combine shredded chicken and sweet Thai chili sauce in a medium bowl. Mix well. Divide chicken mixture into Athens Fillo Cups evenly.
Top with slices of 2 pieces of matchstick carrot, sweet red pepper, cilantro leaves and cucumber. Serve and enjoy!
