I love to serve my son the foods he loves. It makes me happy to see him happy, but I know he shouldn’t be eating unhealthy everyday. So when I want to cheer him up when he’s sick, or just had one of those days at preschool, yet still needs a healthy meal, I’ll make him a dish like this pumpkin mac n cheese.
This mac’ n cheese is also made with those new Progresso recipe starters. This one is Progresso Recipe Starters Creamy Three Cheese Cooking Sauce, and makes the perfect base for mac ‘n cheese dishes. In this recipe I used pumpkin and broccoli to make it even more healthy. He never even noticed the pumpkin and didn’t complain once about the sauce drenched broccoli.
I served this, along with a simple salad for dinner. If you want to add protein, either add crispy bacon or grilled chicken slices to this dish.

Yield: 4 servings
1 (18oz) can Progresso Recipe Starters Creamy Three Cheese Cooking Sauce
1 (15oz) can pumpkin puree
1 cup shredded cheddar cheese
1 (12oz) package Green Giant Valley Fresh Broccoli Cuts
1/8 teaspoon grated nutmeg
8 oz elbow macaroni
Add cooking sauce and pumpkin puree to a 2 quart saucepan on stovetop. Bring to a boil over medium heat while whisking. Reduce to a simmer. Add nutmeg.
Cook elbow pasta according to package directions. Drain and set aside. Cook broccoli cuts according to package directions. Add pasta to a large bowl with sauce and broccoli. Toss to coat.
