Tuna Pasta Primavera

Weeknights in our house can be so incredibly busy, especially this time of year. My son has had so many activities with school not that the school year is winding down. It makes dinner time even more rushed.

I try to make dinners on super busy nights as easy as possible. And one of the kid’s favorite dinners is anything related to pasta. Fortunately I know lots of super quick and easy pasta recipes that take no time at all to prepare and are still filled with delicious, nutritious vegetables.

This tuna pasta primavera is one of my favorites because it contains lots of colorful vegetables and easy, delicious tuna. It’s a special treat for the whole family when I incorporate tuna in a fun pasta dinner like this.

For this recipe I use fresh spinach and broccoli along with frozen and defrosted peas and grape tomatoes. You can use any type of pasta, but my kids really love this cute bow-tie pasta. It’s easy for little hands to pick up.

A quick and easy recipe for Tuna Pasta Primavera.

Ingredients:

  • 2 cans Wild Selections Solid White Albacore Tuna in Water, drained
  • 16 oz bow tie pasta, cooked according to package directions
  • 2 cups steamed broccoli florets
  • 2 cups sautéed spinach
  • 1 cup frozen and defrosted peas
  • 1 pint grape tomatoes, cut in half
  • the zest of 1 lemon
  • the juice of 1 lemon
  • salt and pepper to taste
  • 1/2 cup grated Parmesan (optional)

Directions:

Combine all ingredients in a large bowl and toss to combine.

Serve and enjoy!
