Vegetarian Christmas Lasagna

This lasagna is not only a great idea for Christmas but also a great addition for all holiday parties/gatherings, including Thanksgiving and New Year’s Eve!

What’s on your Christmas menu this year? Every year when I was a kid, our menu looked almost identical on Christmas as it did on Thanksgiving. There wads a ham, a turkey, and all the delicious wonderful sides. It was so good, but I realized as an adult, making a huge dinner on Christmas wasn’t what I wanted to do at all.

On Christmas all I want to do is play with my kids, all day. I plan for months to get everyone awesome gifts, and I want to spend the day having fun with those new toys, and maybe watch a movie or two. Having to spend a lot of time in the kitchen is not fun for me on Christmas.

So a few years ago, I decided to make a Christmas lasagna for Christmas Day. I make it the day before, and refrigerate it until I’m ready to bake it on Christmas Day. It’s so easy and makes Christmas that much more easier.

And because my Father-in-Law is a vegetarian, I always make a vegetarian lasagna filled with lots of veggies. This lasagna is so good, no one even realizes it’s vegetarian anyway. I use MorningStar Farms® Grillers® Crumbles™ for the main protein in the dish. It adds so much flavor!

This lasagna is a great idea to serve on Christmas if you have a vegetarian family member. That way everyone can enjoy the same dish. It’s also a great idea for families that want healthier lasagna options that are packed full of veggies.

A quick and easy recipe for Vegetarian Christmas Lasagna.

Ingredients:

  • 1 (16oz) package MorningStar Farms® Grillers® Crumbles™
  • 1 tablespoon olive oil
  • 1/2 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 medium zucchini, diced
  • 1 cup chopped mushrooms
  • 1 (8oz) bag fresh spinach
  • 2 lbs ricotta cheese
  • 1 teaspoon Italian herb seasoning
  • 2 cups shredded mozzarella cheese
  • 1/4 cup shredded Vegetarian Parmesan style cheese alternative
  • 2 (24oz) jars Marinara sauce
  • 1 (16oz) package lasagna noodles

Directions:

Heat oven to 350°. Use a large lasagna pan, (approximately 14x11, a rectangular pan larger than a 9x13).

In a large skillet or pot, add olive oil and MorningStar Farms® Grillers® Crumbles™. Add onion, bell pepper, zucchini and mushrooms. Sauté until vegetables are tender and crumbles are heated through. Add marinara sauce and bring to a boil and reduce to a simmer. Simmer for 15-20 minutes.

Saute fresh spinach in a small amount of olive oil. In a large bowl, combine spinach with the ricotta and 2 cups of shredded mozzarella cheese. Add 1 teaspoon Italian herb seasoning and mix well.

Bring a large pot of water to a boil. Boil lasagna noodles as directed on package.

In a large lasagna dish, first layer sauce, noodles, cheese mixture, noodles, sauce and so on, ending with sauce and creating three layers of ricotta cheese and five layers of sauce. Then topping everything with the remaining shredded cheese. Cover with aluminum foil.

Bake 30 minutes at 350°. Uncover; bake 15 minutes longer or until golden brown and bubbly.

RECIPE NOTES:

  • Make head tip: Prepare lasagna and cover with plastic wrap, and refrigerate until ready to bake. Then replace plastic wrap with aluminum foil to bake.
