Cook for the Cure: Pink Champagne Cupcakes and a KitchenAid Giveaway

I have been wanting to make these cupcakes for a while. I guess I was just waiting for just the right time. They are so cute, simple and incredibly feminine. Kinda the opposite of me, I’m more of a tomboy, but I really want to be all pink, and frilly like these cupcakes.
When I was contacted by Del Webb to participate in promoting the Cooks for the Cure events to benefit Susan G. Komen for the Cure ®, I knew I had to make those special pink champagne cupcakes. They are quick, easy, and just too cute. Del Webb is the nation’s leading active adult community builder. They have partnered with KitchenAid®, to sponsor Cooks for the Cure events to benefit Susan G. Komen for the Cure ®. From July 15- 24, 45 Del Webb communities across the nation will be hosting the events. They are free and open to the public. Activities at these events include: cooking demonstrations, food samplings, live entertainment, silent auctions, raffles, prizes and more. Click on this link to find locations and dates of events.
Del Webb is sponsoring Cooks for the Cure as part of the event’s 10th anniversary, which challenges America to host 1,000 dinner parties to raise money for breast cancer research and community outreach programs. The annual event has raised nearly $8 million since 2001 for Susan G. Komen for the Cure ®.

Yield: Serves 4
Pink Champagne Cupcakes
Ingredients:
For the cupcakes:
1 box white cake mix
a few drops red food coloring
champagne - to use in place of water for cake mix
For the frosting:
8 oz shortening
1 lb powdered sugar
1 teaspoon vanilla
2 - 3 tablespoons milk
Candy Pearl Sprinkles
Directions:
Cook cake according to package instructions, replacing champagne for the water and adding a few drops of red food coloring to make cupcakes pink.
Let cupcakes cool and make frosting by adding shortening and powdered sugar to stand mixer. Mix on high with whisk attachment until blended. Add vanilla and milk and mix on high until light and fluffy.
Frost cupcakes and sprinkle candy pearls on top.
