Pecan Pie Bars
This is the most delicious dessert. Its not too sweet, and filled with pecan goodness. Its a quick and easy dessert that could also be made with roasted walnuts. This recipe was sent to me by my friend Jim. Its an old recipe, that I have modified a bit. These pecan bars have the texture of a rich blondie. The roasted pecans give an amazing flavor. The pecans are ground in the food processor until they are super fine, and then roasted to bring out their wonderful flavor. The brown sugar and vanilla give an amazing flavor that nicely compliments the pecans. These bars are the epitome of southern comfort food. I put the leftover bars in the freezer, and have been snaking on one or two a day since I made them. My toddler son goes and gets the container from the freezer, and asks for a cookie, he loves them.

Pecan Pie Bars
Ingredients:
4 eggs
1 lb brown sugar
1 1/2 cups flour
1/2 lb, or 2 sticks butter
1 1/2 cups grated super fine roasted pecans
1/2 teaspoon kosher salt
1 teaspoon vanilla extract
pecan halves
Directions:
Preheat oven to 350 degrees. Take chopped pecans, or pecan halves, and pulse in food processor until they are very fine. Spread them out on a cookie sheet and roast for 8-10 minutes, just until they are fragrant.
In a large mixing bowl, add sugar, butter, and salt. Whisk to combine. Whisk in eggs one at a time until incorporated. Add flour, and whisk until just combined. Add vanilla and pecans, mix until incorporated.
Place mixture in a greased 9 x 13 pan. Place pecan halves on top of each 2" x 2" square. Bake at 350 degrees until bars pass the toothpick test.
