Today is my son’s very first baseball game. He’s so excited for tonight. His team has been practicing for a few weeks and he’s been working on his batting, pitching and other skills in the backyard. He’s got a great friend on his team that’s helping inspire and motivate him to be a better player too. It’s such a joy to see all the kids play together and have such a good time.

Since today is the kickoff of the first game of the season, it’s a start to a very busy fall baseball season. My son will have 3 games a week plus multiple practices. I’m not going to have nearly as much time for weeknight dinners as I use to.

To deal with hectic family schedules, I like to keep some of our favorite freezer meals and key freezer ingredients on hand. Having delicious meal options in our freezer makes the process of making dinner so much easier.

Below I have also made a list of some of my favorite freezer items and meals that help me get through these hectic fall schedules. These freezer items make dinner a snap.

TEN Freezer Items to Help You Save Time this Fall

  1. Frozen burgers – these can be beef, salmon, chicken or veggie and make a perfect quick dinner
  2. Frozen Pasta like ravioli or tortellini – can be made into a delicious quick pasta dinner or soup
  3. Pierogies – can be fried, sautéed or made into the best casserole you’ve ever had.
  4. Frozen Meatballs – can be used for pasta, subs, pizza or soups
  5. Frozen Waffles – homemade or store bought, kids always love these
  6. Frozen fruit for smoothies – I like to buy large bags of mixed berries
  7. Pre-prepared breakfast sandwiches – homemade or store-bought are perfect grab and go breakfast items
  8. Frozen Chicken Nuggets or strips – these are great as a snack, in wraps and salads
  9. Frozen Pizzas (or pizza dough)- paired with a salad makes everyone’s favorite quick dinner

My family absolutely loves burrito bowls, so when I found Frontera® Chicken Fajita Bowl and Frontera® Barbacoa Taco Bowl, they were absolutely overjoyed. These premium meals are prepared with expertise and passion. The Mexican inspired recipes used to create these meals are created utilizing time-honored cooking methods.

The meal pictured above is the Frontera® Chicken Fajita Bowl. It’s made with fire-roasted poblanos and chipotle chiles, this perfectly seared, classic Mexican dish tastes great over rice. And can I say that it tastes absolutely amazing!

The meal pictured above is the Frontera® Barbacoa Taco Bowl. In this signature central Mexican dish, tender beef is roasted, then slow cooked with ancho, guajillo, and chipotle chiles. This meal has a little spicy kick that you’re going to love!

There’s also a Frontera® Tinga Taco Bowl which is an authentic recipe from the highlands around Mexico City is made with seasoned, roasted tomatoes, chipotle chile, and slow-simmered chicken. It’s also amazing.

And for vegetarians, or those of us that just love veggies, there’s a Frontera® Veggie Taco Bowl. It contains fire-roasted tomatillos, peppers, corn, and more come together in a zesty green chile and cilantro sauce for a delicious veggie experience any carnivore would envy.

I love that I can just quickly heat up a gourmet meal right from the freezer and pair it with a quick and easy fresh side like I have done here. To go along with these delicious bowls, I made this quick and easy side out of black beans, corn, tomatoes and kale. It’s a delicious little salad that pairs perfectly with any of these meals.

To make this, I start with canned black beans and then rinse and drain them. Next I add some defrosted frozen corn, a chopped tomato, and some chopped kale. As a dressing, I add the juice of 1 lime, some olive oil, ground cumin and salt and pepper.

Then you just mix it up and refrigerate until ready to serve. I love this salad because you can make it ahead of time and keep the leftovers for lunch the next day too.

Black Bean, Corn and Kale salad

Ingredients:

  • 1 (15oz) can Black Beans
  • 1 1/2 cups Frozen and defrosted Corn
  • 1 medium tomato, chopped
  • 1 cup freshly Chopped Kale
  • the juice of 1 medium Lime Juice
  • 1 teaspoon Cumin
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Directions:

Combine all ingredients in a large bowl and mix well. Refrigerate until ready to serve.
