Chai Spiced Sweet Potato Pie

Fall is approaching and it gets me so excited! I love the flavors of fall like pumpkins, winter squash and especially sweet potatoes. Decorating the house with pretty fall decor and pretending it’s not still sweltering hot outside is pretty fun too!
While it’s still short and tanks top season until sometime in December here, that doesn’t stop us Floridians from enjoying fall treats like this yummy Chai Sweet Potato Pie. I especially love treats like this that can be served cool this time of year, so you get the fall flavors, but in a cool and refreshing sweet treat!
This pie is super easy and can be made any time during the fall months or for Thanksgiving too! You start with just a few ingredients – a pie crust, fresh sweet potatoes, brown sugar eggs, milk, butter and Oregon Chai® Tea Latte Concentrate.
To get started, I just bake some sweet potatoes in the microwave, about 2 lbs. You need enough for 2 cups of mashed sweet potatoes. You can also roast the sweet potatoes in the oven or on the grill too. Boiling would also work, but you don’t get the same flavor.
Next, just roll out a pie crust in a deep dish pie plate. I like to use those refrigerated pie crusts. They are super easy and always ready when you need them!
Then you just mix up the filling. It’s going to be a little lumpy. Just mix the sweet potatoes, milk, butter, brown sugar, eggs and Oregon Chai Tea Latte Concentrate in a large bowl. Then use a hand mixer to help smooth everything out.

Chai Spiced Sweet Potato Pie

Ingredients:
For the Pie:
- 1/3 cup Oregon Chai Tea Latte Concentrate
- 1 pre-made or homemade pie crust
- 2 cups mashed sweet potatoes (preferably baked, but you can also boil)
- 1/3 cup milk
- 1/3 cup butter
- 1/2 cup brown sugar
- 3 eggs
For the Meringue:
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 4 teaspoons sugar
Directions:
For the pie:
Heat oven to 350° F. Place pie crust in deep dish pie plate. Combine all ingredients for pie in a large mixing bowl. Mix with electric mixer until well blended on high.
Pour in pie crust and bake at 350° F until done.
For the Meringue:
Separate egg whites in a large bowl. Mix on high with a hand mixer until meringue has soft peaks. Add sugar, a tablespoon at a time, mixing well after each addition. Add cream of tartar. Mix on high until meringue is smooth and glossy, do not over mix.
Spoon meringue on warm pie and bake at 350° F for about 10 minutes, or until golden.
