Grilled Chicken Tacos

We’ve officially kicked off the last week of school in our house. My kids are so excited for summer vacation and so am I! We love to spend time together as a family and invite friends over for summer get-togethers, especially outdoor BBQ pool parties!
When we bought our home, we made sure that it had a large pool and huge back porch and deck. Entertaining friends and family is so important to us. I wanted to make sure we had plenty of conversation areas to enjoy both the inside and outside of our home too!
All through the year, we take time to plan and host get-togethers for friends and family. We love hosting get-togethers for everyone, especially outside BBQ parties. Since we live in Florida, the weather is warm enough to enjoy the outside and our pool almost all year long.
Last summer we had so much fun with one of the BBQ’s we had. We did this super fun grilling taco party. I grilled chicken, flank steak and thin pork chops. I sliced all the meats super thin and had lots of fun toppings as part of a “create your own taco” toppings bar with different sauces for the tacos too.
I had chopped onions, tomatoes, cilantro, pineapple, bell peppers, carrots, radishes, jalapeños, guacamole, salsa, sour cream, black beans and cilantro rice all in different bowls. Everyone loves to create their own yummy tacos.
For the tortillas I used both flour and corn Mission tortillas (my favorite brand) and just heated them on the grill. For best taste, tortillas should always be heated. Instructions for the best ways to heat are found on the back of product packaging.
Our BBQ taco party was a huge hit and one of the most fun BBQ get-togethers we’ve ever done! Everyone loved the “create your own taco” toppings bar theme, especially the kids. I can’t wait to re-create a BBQ taco party again this year! My friends and family can’t wait either!

They are so versatile too for such a wide variety of dishes from tacos, enchiladas and quesadillas to lunch wraps, roll-ups and even ice cream cones!

For this recipe I’m sharing our favorite grilled chicken taco. It starts with a super simple marinade of spices and garlic and lime juice and then the chicken is grilled to perfection. This is one of the marinade recipes that I’ll be using for our BBQ taco party this year.
The marinade is super easy and can be put on the meat just a few hours before cooking the chicken. You could even make the marinade even more delicious by adding tequila and making a tequila lime grilled chicken. Yummy!
The toppings for this taco are simple – just tomato, onion and fresh cilantro. You could also add fresh avocado or fresh sliced jalapeños. Grilled Chicken Tacos Recipe

- Mission®Super Soft Yellow Corn Tortillas
- 2 lbs boneless skinless chicken breasts, butterflied and pounded thin
- 1 tablespoon dry garlic herb seasoning
- The juice of 3 limes
- 2 tablespoons olive oil
- 2 medium diced tomatoes
- 1 cup freshly chopped cilantro
- 1 medium red onion, diced
- Your favorite hot sauce
- Avocado or sliced jalapeños (optional)
Prepare the chicken and sprinkle with garlic herb seasoning. Then add to a large gallon storage or freezer bag and add lime juice and olive oil. Mix well in bag and let marinate in the refrigerator for 4 hours before grilling.
Prepare all toppings and heat grill to high. Grill chicken on each side until done (about 5-6 minutes per side), or until internal temperature is 165°. Remove chicken from grill and let rest 5 - 10 minutes before slicing for tacos.
Heat tortillas on grill for about 30 seconds per side, or just until warmed. Serve and enjoy!
